Easy To Make Cheesecake

 


Hey everyone this blog post is for any budding bakers. Below is a tried and tested recipe for an easy to make (no-bake) white chocolate cheesecake. I made this recipe yesterday and although it is easy to make it does take a lot of time to set. If you want to make this cheesecake for a specific occasion, make sure you make it the day before. The setting time is around 6-7 hours. 

I have typed out the ingredients and method and I have also included the link to the original website too. I’ve tried to make it as easy to follow for anyone who has never made cheesecake before. 

The original website suggests fruit as a topping and this is generally what you will find with cheesecake recipes but I opted for a sweet tooth cheesecake. I used white chocolate buttons, coloured sprinkles and some Cadbury white shavings. 

I’ve just tucked into a slice of this and it was absolutely delicious if I do say so myself. I got thumbs up from the family too. The topping is very creamy and its worth the wait. Although it does contain 400g of white chocolate it’s not overly sweet. The biscuit base complimented it perfectly. I  broke up the biscuits into small pieces before blending them. It was almost like dust when I was done but I honestly think this made the base all the better.

Ingredients:

300g digestive biscuits

150g unsalted butter (plus extra for greasing)

400g white chocolate (I used Cadbury White)

300g cream cheese (I used Philadelphia)

250g mascarpone

300ml double cream

You can also use toppings of choice

I used white chocolate buttons, white chocolate shavings & sprinkles

 

Method:

Crush biscuits in a blender until completely ground. Add the butter and blend again. If your blender doesn’t mix this all together, you can blend the last remaining mixture with your hand, most of the work will have been done. 

 

Have your 8” or 10” tin greased and ready to use. Add the biscuit mixture to the tin and make sure it is flat. Leave to set in the fridge for around a half hour.

 

Begin melting your chocolate of choice in a heatproof bowl over a pan with hot water on low heat to prevent the chocolate burning and sticking. Stir the chocolate as you’re melting it. Remove from heat once is has completely melted and leave to cool for 10-15 mins. Make sure it stays liquid.

 

While the chocolate is cooling whisk the cream cheese and mascarpone together. Add the double cream and keep whisking until the mixture holds together. Add the chocolate and whisk until they have combined completely. 

 

Spoon the mixture over the set biscuit mixture and smooth down the top. Return to fridge and cool for around 6 hours or until the topping has set. You can now add your toppings of choice and serve.

 

This should serve 8-10.

A Little Cheesecake Never Killed Nobody


So just before the government locked down Dublin…AGAIN, I got to visit Café 1920 the cutest little restaurant/bar attached to The Fleet Hotel on Westmorland Street. Now I’ll be honest I love, love, love anything 1920s so I’m a little biased but this place is divine. The furniture is cosy and transports you back to another time. I wore my sparkly black and gold dress so don’t worry I was dressed for the transportation. 

Café 1920 is usually a lunch spot and I’d imagine with it’s location is quite busy during lunch hour. We chose to dine in for dinner and it was so cosy and quiet and the staff gave us their full attention. We couldn’t fault them on anything. The menu had too many nice things for me to choose from.  The boyfriend kept encouraging me to order more than one option haha. I would have needed to be carried out of there. After much deliberation I went for the classic fleet burger, which was so tasty. I'm loving the fact that most places are adding relish sauces to their burgers, it's a game-changer. I was delighted with my choice, it did not disappoint. 

Now I don’t know about you but it’s not a full 1920s experience unless you break out the cocktails, so obviously when the waiter asked if we would like to see the cocktail menu it was a “hell yes” in response. I chose to try a range of Gin-infused cocktails. All were delicious and the waiter definitely blushed a little when we informed him of this. He is definitely proud of his cocktail making skills. 

I know you all came here for the cheesecake and well I went there for the cheesecake too so I’m getting to it. The star of the night was in fact…wait for it “Gin and Raspberry Cheesecake”. Did they see me coming or did they see me coming. It was absolutely wonderful. This cheesecake had the perfect combination of flavour and textures. It was bitter and sweet. It was creamy and crunchy and it was presented beautifully on the plate dressed with delicious fruit and sauces (check out the pictures). Each layer was perfectly executed. The top layer was a mixture of sauce and chunks of fruit. The middle layer which puts the cheese into cheesecake was so smooth and was the perfect consistency. Finally, it just wouldn't be cheesecake without biscuit and I thought it was a great touch adding a crushed up layer of chocolate biscuit along the side of the plate. 

Let me tell you I stumbled away (after the gin) a very happy girl. I’ll be rushing back there as soon as the government stop holding Dublin hostage. Well there were so many more options to try on the menu so it'd be rude not to lol 

Now, more than ever it’s so important to help out local businesses around the country. So if dining in isn’t an option then check if you can take away. Go order that cheesecake to the house, what are you waiting for…A little cheesecake never killed nobody!!!

My Take On Cheesecake


I love food. I know it, the scale knows it and the waistband of the trousers that don’t fit me anymore knows it. But there’s one food I just can’t live without and that’s Cheesecake. I pick restaurants based on whether or not they have cheesecake on their menu. That’s no joke!!! It’s rather disappointing sitting through a meal at a restaurant knowing there’s no cheesecake at the end and even worse when the dreaded words come from the waiter’s mouth “There’s no cheesecake left”. I curse the cheesecake lovers that came before me lol 

This blog is just something fun I decided to do because I love writing and wanted to get back into it while also sharing my love of Cheesecake, maybe meet some cheesecake lovers or help someone find their new favourite dessert. This blog might help some budding bakers or maybe just give you some ideas for new restaurants to try. 

I’ll be sharing my reviews and opinions of the places I’ve eaten the cheesecakes but I’ll also be trying out some recipes so that you can also make your own tried and tested cheesecakes.

This blog is a long time coming. First life got in the way and then many, many excuses but I think there’s no better time to get started than right now.  As the news likes to say; “This is uncertain times”. So if you can’t dine out then order in or better yet, make your own and put your feet up and enjoy this blog while tucking in to your well deserved slice of heaven. So follow along and I hope you enjoy reading the blog as much as I enjoy writing it.
